Vegan Fried Rice

Fried rice with tofu

Ingredients

  • 2 c. water add pinch of salt
  • 1 c. long grain white rice
  • 1/2 c. button mushrooms
  • 1/4 c. frozen peas
  • 4 Tbsp. canola oil
  • 2-3 Tbsp. soy sauce mostly to taste
  • 2 Tbsp. garlic minced
  • 2 fillets extra firm tofu cubed
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1/2 onion diced
  • salt to taste
  • pepper to taste

Instructions

  1. Cook rice in the water according to directions.  Place in the fridge.

  2. Saute all vegetables, along with 1 Tbsp. garlic, in approximately 3 Tbsp. of canola oil over high heat until mostly soft. 

  3. Mix veggies with chilled rice.

  4. Heat 1 Tbsp. of canola oil in separate pan and add tofu, soy sauce, and 1 Tbsp. of garlic.  Cook until golden brown and set aside.

  5. Add soy sauce to deglaze rice pan mixture.

  6. Add tofu to rice & veggie mix.
