
Vegan Fried Rice
Fried rice with tofu
Ingredients
- 2 c. water add pinch of salt
- 1 c. long grain white rice
- 1/2 c. button mushrooms
- 1/4 c. frozen peas
- 4 Tbsp. canola oil
- 2-3 Tbsp. soy sauce mostly to taste
- 2 Tbsp. garlic minced
- 2 fillets extra firm tofu cubed
- 2 carrots chopped
- 2 celery stalks chopped
- 1/2 onion diced
- salt to taste
- pepper to taste
Instructions

Cook rice in the water according to directions. Place in the fridge.

Saute all vegetables, along with 1 Tbsp. garlic, in approximately 3 Tbsp. of canola oil over high heat until mostly soft.

Mix veggies with chilled rice.

Heat 1 Tbsp. of canola oil in separate pan and add tofu, soy sauce, and 1 Tbsp. of garlic. Cook until golden brown and set aside.

Add soy sauce to deglaze rice pan mixture.

Add tofu to rice & veggie mix.
